Description
This is the classic Picual from Jaén in Spain, and it is tomato-forward in every way. The aroma opens on tomato leaf and fresh-cut grass. That carries straight into the mouth as green tomato, bell pepper, fresh lettuce and bitter endive, before rounding into a warming black peppercorn finish with hints of baking spices and warm cinnamon. As it lingers, a cool minty note comes through. It is well balanced rather than punishing — not overly bitter, and the pungency is bright and spicy without catching at the throat.
Picual is Spain’s most widely planted olive, and its high oleic-acid and polyphenol content make it exceptionally stable — which is why it holds up in the pan where more delicate oils fall apart.
Use it from breakfast to dinner. Scramble eggs in it, fry bread for a breakfast sandwich or pan con tomate, roast potatoes, sear meat. Make a tomato confit, roast cherry tomatoes, build a simple pasta sauce, or drizzle it over caponata. Its vegetal, tomato and black-pepper profile also pairs beautifully with Indian and Southeast Asian cooking — try it in dahl or chili paneer.
