This is the most amazing balsamic I’ve ever had, a sauce unto itself. I added it to some Red Swiss Chard, pancetta, onions, and garlic. It was the perfect accompaniment to the pork and chard, adding just a hint of sweetness from the maple and smokiness from the bourbon. Absolutely delightful. Why take the time to make a sauce when you can use this? I’m going to try it on salmon next.
